Corte del Dome decided to start its journey of discovery and selection in Tuscany, and it couldn't have been otherwise, since the brand's founder is tied to the land both in heart and mind. Finding itself almost in the middle of the long peninsula, Tuscany presents a wide variety of vistas and traditions. From the mountains to the sea, from the hills to the plains, to the colors green and blue found in its recipes.
The second leg of our journey is the region of Liguria and we are working to add 10 more regions with their exclusive products in the imminent future.
This is a celebration of the ingredients' quality and simplicity; a cuisine that bases itself on recipes that have been passed down through generations and that reflect the authenticity and seasonality of the products. Since this project has a strong personal connection, it's important to stress that these Tuscan flavors have deep roots in the region, which fully emerge in every dish that Corte del Dome prepares and presents.
Tradition dictates the raw materials, those that are hand-tasted and experienced in the family kitchen. Our pasta's selection is based on the unique quality of two ingredients: water and durum wheat, both rigorously Tuscan. The water used is taken from a private spring that arrives directly from the Pistoiesi mountain chain, where the Abetone Mountain's winter snow melts and takes its course. The wheat used here is born from the passion and tradition of the Tuscan Maremma's farmers. It's chosen before it is even farmed, defining the land of its cultivation.
It's realized like in days of old: in a workshop, where it's made in the morning and left to dry for 3 days in wooden cells. No industrial process.

An olive oil of the highest quality, crafted from cold pressing Tuscany's best olives, harvested manually and produced with traditional techniques that respect the environment and the land's biodiversity. The entire processing is characterized by detailed attention shown in every single phase of production, from the washing to the defloration to the oil's filtration, all to obtain a final product with quality parameters that are superior to all others.
The PGI (protected geographic indication) logo guarantees the origin and quality of our oil, which is exclusively produced in Tuscany, fully respecting the rigid norms of procedural guideline.
Characterized by an intense green color, Corte del Dome's olive oil is well balanced and well made. A perfect marriage of tradition, passion and innovation. When smelling it, one can perceive scents of sweet almond and artichoke. The oil is produced with olives that are harvested in the last days of October, until the second half of November, and then cold pressed. So, these are olives that have fully reached their ripeness, thus producing an oil with a full and rich flavor that helps to better our dishes with nuances of scent.
Corte del Dome's oil is ideal to be added last-minute to any recipe (Ribollita Bread Soup, Tomato Bread Soup or any other recipe in the selection), or to act as dressing for cold dishes like salads and carpaccio.
